This afternoon whilst Theo napped, Matilda and I made banana & raisin flapjacks. My goodness they were yummy. Matilda loved them! And so I thought maybe you would like to make some too.
You will need...
~ 40g sunflower spread
~ 60g demerara sugar
~ 1 tbsp golden syrup
~ 1 tbsp honey
~ 225g porridge oats
~ 50g raisins
~ 2 medium bananas
Melt the butter and add the sugar, golden syrup and honey. Mix well. Roughly mash the bananas and add them into the mixture along with the raisins. Mix in the oats and pour into a greaseproof paper lined baking tray. Ours was about 15x20cm. Flatten the mixture before popping the tray into the oven. Bake at 200˚C for approx. 15-20 mins. Remove when they are slightly browned. Slice up whilst warm.
Voila! An extremely yummy but not too naughty Monday afternoon treat.
They really don't take long. I'm pretty sure you can freeze them too.
